Create a large and beautiful edible fruit bouquet! These stunning bouquets can cost well over $150 retail. Once you have the tools and "know how", you can make them for a fraction of the cost to give as gifts, or even to use as wedding centerpieces! Materials fee to include: large white decorative urn, Thai wavy knife, flower cutter, long bamboo skewers, melon baller, Belgian Callebaut Chocolate, and green leafy lettuce filler.

Students need to bring the following items to class:
• 2 cantaloupes
• 1 honeydew
• 1/2 lb red grapes
• 1/2 lb green grapes
• 1 large pineapple
• 1 large firm head/ball of iceberg lettuce
• 20 large strawberries
• 1 favorite chef knife from home (chef knives are also available for loan in class)
• 1 large plastic bag to cover bouquet
• 1 large box to transport your bouquet home

All other needed materials are provided for $25 materials fee.

Parking permits are required in all student parking lots at Mesa College, Monday through Friday from 7am-10pm. Permits are not required on Saturdays, Sundays or College Holidays. One-day parking permits are available in the vending machines in the parking lots at Mesa College. The cost is $1 per hour.

Full Semester Certificate Program
"Thai Fruit and Vegetable Carving"

Thai fruit and vegetable carving, “kae sa luk”, is a 700 year old art form practiced by chefs all over the world, and a cultural treasure of Thailand. In this 15 week certificate program students will gain fundamental Thai fruit and vegetable carving skills they can use to expand their culinary repertoire and compliment their culinary arts coursework. We will cover Thai style plate garnishing, ornate melon carving, vegetable flowers, fruit bouquets, vegetable bouquets, and culinary competition centerpieces. A $30 fee will be paid to the instructor for carving tools required to complete the course.
